I absolutely love Cooking with my Family. It is always a lot of Fun to create some usually amazing Food together. We just do not get to do that very often.
So I was obviously very happy when we actually did have the Time to get together yesterday to make an awesome veggie Lasagna with Sweet Potato, Spinach with Cream Cheese and some red Beetroots.
To build our Lasagna, we had to prepare all our Ingredients to actually create the Filling for all the different Layers.
We had to make some Sweet Potato Mash, a bit of Cream Cheese Spinach Cream, and we had to slice those Beetroots.

First, we diced our Sweet Potato to then boil it and turn it into a beautiful Mash.
For that, we also needed some Butter, a bit of Seasoning and for some reason also an Egg.
To be honest, I did not have much to do with preparing the Mash apart from dicing the Sweet Potatoes.
Preparing that Part of the Lasagna was actually my Brothers job.

While he was doing that, I had been tasked with preparing the Cream Cheese Spinach Cream.
For that I had to blend the Spinach that we had sautéed with Shallots ahead of Time with a whole lot of Cream Cheese, some Goats Cheese and Parsley.
Mixing also those Ingredients was a bit messy at first, but it worked very well with a lower Blender setting.
In the End, that Cream was definitely very tasty, b it it could have used a bit more Spinach in my Opinion. Or maybe a b it less Parsley.

After preparing all those Ingredients, my Mom sliced the Beetroot after making Dessert, all that was left to do was to cook a Béchamel and then assemble the Lasagna.
The Mash went int first, creating two Layers of the Lasagna. Then, my Spinach Cream made up two more Layers which were then covered with those Beetroots and some Cheddar Cheese.
All that then had to be baked for about half an hour. In the middle of Cooking, some of the Lasagna started dripping out of the Lasagna Dish. It was actually quite messy.

In the End, our home-made veggie Lasagna turned out absolutely delicious, but also very stuffing.
All of those beautiful Lasagna Layers were flavourful and could have made a nice Meal all by themselves.
The only Bit I did not like very much in the End was actually the red Beetroot. I do not know what it was, but I just was not the biggest Fan of those Things.
