A few days ago, my Fridge was pretty empty, but I also didn’t want to go out and buy something because the Weather was pretty rough.
All I had in my Fridge were 2 Eggs. Normally, I would just scramble them, but this Time, I had something different in Mind.
That’s because I also had some left-over Rice in the Fridge that I wanted to use up.
Those few Ingredients in Mind, I decided to cook something very simple: Fried Rice with Egg in it.

To make this simple Meal, I just added the Rice into a Pan with some Rapeseed Oil and fried it up it for quite some time , adding almost copious amounts of sweet Smoked Paprika and some Spice Mix I like to use.
While that already looked kinda tasty on its own, I then added in my 2 Eggs and pretty much just stirred them into the Mixture.
I cooked that Concoction for a few more Minutes, until the Egg was done, and put all of it onto a Plate.

Truth be told, this simple Fried Rice turned out to be very delicious. Since I had absolutely no other Ingredients at Hand, I couldn’t have done this differently anyways.
In the End, it was a good Way to get rid of some old Rice. And that’s all I ever wanted.
Obviously, if I had actually planned to cook actual Egg Fried Rice, I would have done that very differently, and with mostly different Ingredients.
Since that was absolutely not my Goal though, I hope my simple Meal will not get reported to Uncle Roger. That would be bad.

Last Weekend, I then found something I had been looking for for some Time already in an Asian Supermarket: Korean Kimchi. I don’t know what I will cook with that yet, but I hope it will turn out good.

Good way to use up what you have on hand! And it sounds like you ended up with something that tasted good, too. 🤗
Have fun with the kinchi. I’m curious to see what you do with it. I pretty much think of it as Korean sauerkraut and put it on sandwiches or use it as a side dish. I like the spicy kick!
